MAKE HOW TO HIBERNATE

Dig in for December. It’s time to cosy up.

EAT Winter Spice Biscuits. Sweet, nourishing, comforting.

220g butter
90g self raising flour
1 egg
220g set honey
70g carrots
40g poppy seeds
2 teaspoon vanilla extract
1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp cardamon
zest of a lemon and an orange
pinch salt
140g rolled oats

Set the oven to 180c
Grate the carrot and squeeze it in a clean tea towel to remove some of the moisture.
In a clean bowl mix the flour into the butter. Add the egg and beat briefly.
Fold in the carrot and the other ingredients to make a soft dough.
Wrap in clingfilm and chill in the fridge for an hour
Roll pieces of the dough in balls, flatten, and bake for 12 minutes.

PICK a perfect tree (and put it in a bucket)

A freshly cut Christmas tree is biodegradable and recyclable. Nordmann, Noble and Scottish Fraser fir will keep hold of their needles and won’t prickle your hands like a spruce. Rich, dark-green and heavy with fragrance, think fragrant forest but no fuel miles. We love a tiny tree in a tin bucket.
